Acacia is the predominant flower. Extra light amber color, predominantly floral aroma, light and delicate. On the palate, its sweetness stands out, very persistent.

Popular culture attributes sedative properties and laxative effects. It is the only honey recommended for diabetics, in small quantities.

Crystallization is rare or very slow, due to its high fructose content.

This honey can crystallize over time, becoming thick. This is a sign of quality. In a bain-marie, without exceeding 40ºC to avoid losing its properties, it returns to its original liquid state.
