Raw rosemary honey: authentic spring flavour

Raw creamy rosemary honey is a true gem of our artisanal beekeeping. Harvested in spring along the Catalan coast, this honey is primarily derived from the nectar of Rosmarinus officinalis, a Mediterranean plant known for its health benefits and distinctive aroma.

Characteristics and taste of Catalan creamy honey

This honey stands out for its very light, almost white colour. Its aroma is delicate and persistent, reflecting its botanical origin. On the palate, it offers a sweet, mild and slightly floury taste, with a smooth texture perfect for spreading or culinary use.

Unfiltered raw honey: pure, natural and alive

Produced using traditional methods and without aggressive filtration or heating, this honey preserves all its natural nutrients: enzymes, pollen, propolis and wax particles. These are signs of a genuine, unprocessed honey.

Rosemary benefits and raw honey properties

Rosemary is a natural tonic known for its many therapeutic uses. Traditionally, it has been used to:

  • Relieve rheumatic and muscle pain
  • Stimulate digestion and support stomach health
  • Strengthen the respiratory system
  • Act as a natural antioxidant and antibacterial

Rosemary: Mediterranean flower with ancient virtues

Rosemary is native to the Mediterranean region and grows naturally in dry, rocky coastal areas. Used for centuries in both cuisine and traditional medicine, it is prized for its digestive, anti-inflammatory, and revitalising properties.

In beekeeping, rosemary is one of the most appreciated nectar sources. Its spring bloom provides bees with rich pollen, producing a honey that is light, floral, and easy to digest. Rosemary is also part of the local heritage in Catalonia, used in folk remedies and natural cosmetics.

Culinary uses of raw creamy honey

Thanks to its creamy texture, this honey is ideal for:

  • Spreading on toast, biscuits, or soft cheeses
  • Mixing into yoghurts, teas, or smoothies
  • Sweetening desserts, cakes or cereals
  • Pairing with white meats or savoury-sweet recipes

FAQ – Frequently asked questions about raw rosemary honey

1. What’s the difference between raw and regular honey?

Raw honey is not heated or intensely filtered, preserving natural enzymes, pollen and antioxidants. Regular (processed) honey may lose these properties during pasteurisation.

2. Why is rosemary honey so light in colour?

Rosemary nectar creates a very clear, mild honey with a white hue – a sign of floral purity and spring harvesting.

3. Is raw honey safe for children?

Honey should not be given to children under 1 year old. After this age, it’s safe and raw honey is an excellent, natural choice.

4. How should I store raw honey?

Keep it in a cool, dry place away from direct sunlight. If it crystallises, this is natural. Gently warm the jar in a water bath (below 40 °C) to restore its liquid form.
