In the mouth, it is a sweet honey with a slight, persistent acidic touch.
It is one of the most valued monofloral honeys for its medicinal properties:

This honey may crystallize, becoming thick. This is a guarantee of quality. When placed in a water bath, not exceeding 40°C to avoid losing its properties, it returns to its original liquid state.
